Fairy Cupcakes

I have definitely caught the baking bug and I am really liking trying new recipes. I’m also trying to bake every recipe in my book I got as I miss baking from scratch.

So today the recipe that was next in my book was Fairy Cupcakes so that was what I made today.

All you need for this recipe is:

150g Self Raising Flour

150g Caster Sugar

150g Unsalted Butter

2 Eggs

First you have to preheat the oven to 180/Gas Mark 4, then mix together the caster sugar and butter in a bowl until pale and fluffy.

Once pale and fluffy then gradually add in an egg and mix together. Then you add in the flour and fold in with a metal spoon, I actually used my electric mixer so it’s up to you what you’d like to do. Then spoon it into the cupcake cases and bake for 20 minutes.

Once they were baked and had cooled down it is time to decorate!!

All you need for the icing is:

200g Icing Sugar

2 tbsp Lukewarm Water

1/4 tsp Red Food Colouring

I actually put in 3 tbsp of water as it was quite thick and wasn’t completely mixed but I think it was to much as the icing was rather runny. I will eventually learn to get the perfect icing!! In my recipe book also the icing was pink but mine is a more Coral pink than pale pink but I’m happy with that.

I used a 1/2 tsp of icing on each cupcake until all the icing was gone and then proceeded to put the Sugar Flowers on. I also got cherries to put on them but the cupcakes were smaller than expected so just used the flowers.

How cute are they!! The icing actually covered the cakes really well and looks so smooth! The little flowers look so cute as well, especially the roses.

I haven’t tasted them yet so I hope they’re going to taste nice haha!! I think these are perfect cakes for Spring if you could associate cakes with a season.
